MAPLE PORK BURGER WITH APPLE SLAW
INGREDIENTS
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.

1 lb lean ground pork

2 tbsp maple syrup

1 tsp onion powder

½ tsp salt

1-2 sweet potato, sliced into eight ½-inch rounds

2 cups cabbage, shredded

1 apple, cut into matchstick pieces

½ cup red onion, thinly sliced

2 tbsp mayonnaise
-
1 tbsp apple cider vinegar
-
1 tsp Dijon mustard
-
Salt and black pepper to taste

8 slices sharp cheddar cheese, optional
DIRECTIONS

Preheat oven to 450°F. In a bowl, combine ground pork, maple syrup, onion powder, and salt. Mix until ingredients are well distributed. Set aside to allow flavors to meld.

Line a baking tray and spray with spray oil. Lay down sweet potato slices and spray lightly with oil. Roast for 15-20 minutes, until tender. Cool slightly.

In a bowl, combine cabbage, apple, red onion, mayonnaise, cider vinegar, and mustard. Mix well and season with salt and pepper to taste. Set aside.

Portion seasoned pork into 4 patties. In skillet over medium high heat sear patties for 2-2 ½ minutes per side, until it reaches an internal temperature of 160 degrees. Top with cheese if desired.

Plate burgers with one slice of roasted sweet potato, burger patty, ½ cup of apple slaw, and a second sweet potato slice.
*Ground pork is safe to eat when cooked to 160 degrees.
